Keto Watch: What Are The Best Choices At Zaxby's?

On the watch for Keto-friendly restaurants that serve good food as well as healthy choices.


Here in Hot Springs, Arkansas, we have Zaxby’s, a southern-based chicken restaurant.  Zaxby’s was started by two friends, Zach McLeroy and Tony Townley from  Statesboro, Georgia. In their opinion, back in the 1990s chicken restaurants were boring and lacked flavor.

Their thinking was the world needed desperately another chicken place. Not sure if it is any less “boring” than other chicken joints, but it is a bit more upscale. 

I had heard they have great salads or as they refer to them at Zaxby’s “Zalads”. Of course, I need to find out if their Zalads are Keto-friendly, or not.

Keto Italian Sausage Cauliflower Hot Dish

This was originally the Loaded Keto Cauliflower Casserole from KetoConnect. Thank you, Matt and Megha! My wife made some adjustments due to the ingredients we had available.

When we were at the store the heads of cauliflower in stock weren’t the best. So, we decided to use frozen cauliflower and leave out the water due to higher moisture content. Also, we had some Italian sausage we needed to use or freeze.
Hard to find chives in our neck of the woods so we added extra green onions. We left out the parsley and added Ricotta cheese to add to the Italian taste. We called it Hot Dish because my wife grew up in Minnesota.

Keto Friendly At The Home Plate Cafe

Sometimes, while traveling staying Keto and sticking to your diet can be difficult. You never know what to expect when you stop at an unfamiliar restaurant.

My wife and I were out and about this morning doing various errands and some thrift store shopping. We drove to a nearby town, Hot Springs Villiage, visiting some thrift shops and decided to stop lunch.
My wife saw this place called, The Home Plate Cafe, and thought it looked cute. We pulled in to the parking lot and I thought it was a good sign the large back parking lot was filled at 11.00 o'clock on a Friday morning.
The entrance was a little different with customers dining in a foyer type area and the main restaurant off to one side. We were not sure whether to wait to be seated or seat ourselves. But, a man we found later was the owner Jim Sparks, beckoned us to come and be seated.
